Just because last week we made these Worlds Best Mint Surprise Cookies just because we felt like it.  No matter your reason for wanting to make a dessert that looks and tastes fancy but takes practically no skill, this is it! I made them, set them out, and within a flash they were gone. Just gone. Eaten all up. Before I could even relish in their beauty, just gone. Play Dough & Popsicles. I do love cheesecake, more than one human should, but I was always afraid of making it. I tried the boxed mixes and they are alright, but nothing does justice to a fresh pan of cheesecake. I had always heard that it is difficult and never even thought of making my own. Until now. I looked at a few different recipes and combine them to make what I thought would be the best Pumpkin Cheesecake ever..and OMG! It is!! There’s a few steps but they are all super easy and the ingredients are pretty inexpensive, especially if you can find them on sale! The longest part is baking, but who would complain about the wonderful smell of warm pumpkin cheesecake filling the kitchen. The brown sugar in the crust makes it a little chewier than a traditional graham cracker crust. If you are looking for a crumbly crust, omit brown sugar. I used a silicone muffin tin so I didn’t need to grease them. If you are using traditional muffin tins, I would suggest greasing them before putting the crust in. Easy How-To Make: Pumpkin & Caramel Cheesecake Bites


  • Crust:
  • 1/2 Cup Unsalted Butter, Melted
  • 1 Cup Graham Cracker Crumbs (I pulsed mine in the food processor)
  • 1/2 Cup brown sugar
  • 1 TBS Corn Starch
  • 1 TBS Pumpkin Pie Spice
  • Filling:
  • 8 oz Cream Cheese, softened in microwave for 10 seconds
  • 1/2 cup White Sugar
  • 1/2 Cup Pumpkin Puree
  • 3 TBS Pumpkin Pie Spice
  • 2 TBS Flour
  • 1 Large Egg
  • Caramel Drizzle/Topping:
  • Packaged Caramel Dip


  1. Preheat Oven to 350.
  2. Crust:
  3. In medium bowl add graham cracker crumbs, pumpkin pie spice, cornstarch and brown sugar. Mix well with fork. Add melted butter. Mix well.
  4. Press into bottom of silicone muffin tin. About 1/2 full.
  5. Filling:
  6. Mix softened cream cheese and pumpkin together.
  7. Add remaining ingredients (sugar, pumpkin pie spice, flour, and egg).
  8. Mix with fork until well blended and no clumps. Don't over mix.
  9. Pour on top of crust in muffin tins.
  10. Bake for 30 min or until a toothpick comes out clean.
  11. Let cool. Put in fridge for 2 hours+ or freezer for 30 minutes.
  12. Caramel Drizzle/Topping:
  13. Microwave 3/4 cup of caramel dip for only 25 seconds to make a little thinner.
  14. Add 1 TBS of milk, stir well.
  15. Drizzle on or top cheesecake bites.
