How-To Use ONE Cake Mix & Make TWO Delicious Desserts 16



Growing up, my mom, sister and I made cookies often. It was fun to share the steps, getting all of the ingredients in the bowl, and yes my sister and I probably fought over who would do what. Because pouring flour is so much less exciting than pouring sugar, right? 

In high school, I would say, my mom shared a new way of making cookies with us. A box of cake mix. Umm..What? How does that work. Well guess what people, it works! And it works deliciously!!! She made the classic pumpkin chocolate chip cookies with a spice cake mix. They have been a favorite ever since.

I decided to try something different when I came upon our family’s new favorite frosting in a jar: Vanilla Marshmallow. When I say OMG..I mean Ohhh Emmmm Geeee! It is creamy and has a smooth vanilla flavor but the marshmallow gives it a pop! It’s not too sweet, which I was afraid of. It’s just, dare I say, {Perfect}.

I had to use the frosting and I had a Perfectly Pumpkin cake mix.. and from these two inspirations these delicious desserts were created. What a wonderful combination!

The first dessert is what I am calling Perfectly Pumpkin Cake Waffles with Vanilla Marshmallow Glaze.
These waffles are perfectly fluffy and soft. The perfect dessert without being overwhelmingly sweet or rich.

One Cake Mix, Two Delicious Desserts - Play Dough & Popsicles - Perfectly Pumpkin Waffles with Vanilla Marshmallow Glaze

Ingredients:

Waffles:
Half of the cake mix (just double everything if you want to use the whole cake mix)
1/4 Cup of Pumpkin Puree
1 TBS Pumpkin Pie Spice
4-5 TBS of Water
Butter

Glaze:
1/4 Cup Vanilla Marshmallow Frosting
2 TBS Milk
Cinnamon

Directions:

Mix half of cake mix, pumpkin pie spice, and pumpkin puree together. Add water & Mix well. Consistency should be thicker than typical waffle mix or cake mix but thinner than cookie dough.
Spread butter on hot waffle iron. Yes I use real butter, not spray.
Cook waffles until waffle maker says they are done. (I don’t know how long it cooked, I just wait for my light to switch from red to green)

For Glaze:
Take 1/4 cup of Vanilla Marshmallow frosting. Mix in 2 TBS of milk. Mix well. Consistency should be thinner so it can be easily drizzled.

Drizzle glaze on waffles and sprinkle cinnamon on top. Then E.A.T.!

One Cake Mix Two Desserts - Play Dough & Popsicles - Pumpkin Soft Sandwich Cookies

The second is a little more simple, if that is possible. Soft Pumpkin Sandwich Cookies with Vanilla Marshmallow Center. I mixed half of the cake mix with some pumpkin puree, mixed it together, put it in the oven and scooped some frosting in the middle and YUM!

Ingredients

Cookies:
1/2 Perfectly Pumpkin Cake Mix
1/2 Cup of Pumpkin Puree
1-2 TBS Pumpkin Pie Spice
Vanilla Marshmallow Frosting

Preheat Oven to 350. Mix together cake mix, pumpkin, and pumpkin pie spice. Mix well. Scoop onto greased cookie sheet. Place in oven for 5 minutes, take out and using spatula press down on cookies GENTLY. This will make them flatter so you can make them into sandwich cookies. Bake for another 5-7 minutes.

Let cool. Spread frosting on the bottom of two cookies, sandwich them together, & you’re done.

These are super yummy! I used my cookie scooper thingy so the cookies themselves weren’t huge, they were just perfect. I at one and didn’t feel like I had overindulged. 

 

Yummy. Just wonderful desserts. It’s almost unbelievable what you can make with a cake mix and some frosting! I used Perfectly Pumpkin Cake Mix and Vanilla Marshmallow frosting but don’t limit your baking to that if you don’t want. It could be delicious with chocolate cake and caramel frosting made the same way. Or Vanilla Cake mix with Chocolate frosting.
